Ingredients:
1/4 cup Garlic Infused Olive Oil
1 teaspoon Sesame Oil
2 tablespoons Honey Ginger White Balsamic
1 tablespoon lemon juice
1 teaspoon lemon zest
Pinch crushed red pepper flakes (optional)
2 cups peas (thawed if frozen)
2 cups arugula
1/4 cup red onion, peeled and thinly sliced
2 oz smoked ham or prosciutto, thinly sliced or chopped
3 tablespoons fresh mint, chopped
3 tablespoons fresh dill, chopped
3 tablespoons slivered almonds
Instructions
Place olive oil, sesame oil, balsamic, lemon juice, lemon zest, and pepper flakes in a medium bowl and whisk to combine the dressing. Transfer the dressing to a sealable container and refrigerate until ready to serve.
Place peas, arugula, onion, ham, mint, dill, and almonds in a medium bowl, drizzle with dressing and toss to coat and combine. Divide between bowls and serve.
