Spicy Chi Chi Cocktail

Any time of year is perfect for tropical inspired cocktails. The Chi Chi is a classic drink similar to a Piña Colada, but made with vodka instead of rum for a lighter, cleaner profile. We add an unexpected kick by incorporating our Golden Thai Chili Fruit Vinegar. This vinegar delivers balanced acidity with a fruity, gently spicy brightness that enhances both cocktails and culinary recipes. It pairs beautifully with creamy coconut and bright pineapple flavors, creating a refreshing, well rounded finish that is both vibrant and palate pleasing.

Ingredients: 

½ cup Golden Thai Chili Fruit Vinegar

½ cup cream of coconut 

1 cup pineapple juice 

½ cup citrus-infused vodka 

Toasted coconut, maraschino cherries, pineapple wedges, and pineapple leaves, for garnish 

Directions:

Fill a large shaker with crushed ice. Add the Golden Thai Chili Fruit Vinegar, cream of coconut, pineapple juice, and vodka. Vigorously shake until blended and divide between tall Collins-style or hurricane-style glasses. Garnish the cocktails with toasted coconut, cherries, and pineapple (wedges and leaves). Makes two cocktails.
