Sweet, savory, and tangy, our Pedro Ximenez sherry vinegar from Jerez, Spain, is remarkably complex, with a rich aroma reminiscent of dates, figs, and sun-dried raisins. Aging in American oak casks gives it a dark mahogany color and a smooth but intense woody flavor—it pairs beautifully with any of our EVOOs.
Excellent for macerating plums or apricots or making jams, jellies and preserves. Pairs exceptionally well with bitter greens (collards or mustard greens) as well as oily seafood (mackerel, sardines and anchovies). Our Pedro Ximenez Sherry Vinegar also makes for an amazing addition to braising liquids, especially chicken.
