Classic Caesar Dressing

Ingredients:

½ cup Seasons Family Reserve Picual Extra Virgin Olive Oil

¼ cup Seasons Sicilian Lemon Balsamic Vinegar

¼ cup finely grated Parmesan cheese

1 egg yolk

2 tsp capers

2 tsp Dijon mustard

1 tsp Pepe e Aglio

3 anchovy filets

1 garlic clove grated

1 tsp Worcestershire sauce

½ lemon, juiced

Directions:

In a large shallow bowl, mash the anchovies and capers together until they form a smooth paste. Add the egg yolk and mix until fully combined. Then add the vinegar, lemon juice, Pepe e Aglio, garlic, Dijon mustard, and Worcestershire sauce, whisking until the mixture is smooth. While continuing to whisk, slowly drizzle in the extra virgin olive oil so the dressing emulsifies and becomes creamy. Finish by stirring in the grated Parmesan cheese until fully incorporated.
