Herbs de Provence Thumbprint Cookies with Lemon Curd


1/2 cup Herbs de Provence Infused Olive Oil 

2/3 cup granulated sugar 

2 eggs 

1 teaspoon vanilla extract 

2 1/4 cups all-purpose flour 

1/2 teaspoons Fleur de Sel

1/2 teaspoon baking powder 

1 teaspoon dried herbs de Provence (optional)

1 cup lemon curd 

2 tablespoons powdered sugar 



Place olive oil, sugar, eggs, and vanilla in a large bowl, and whisk to combine. Sift flour into the bowl and add salt, baking powder, and dried herbs. Using a rubber spatula or a spoon, stir until the cookie dough has been combined. Using a small scoop or tablespoon, measure, portion cookie dough, roll into a ball, and place each, 2 inches apart, on the prepared baking sheets. Using your thumb, press deep imprints into the center of each cookie and fill with lemon curd. Bake cookies for 10-15 minutes or until slightly golden around the edges. Remove from the oven and let cool to room temperature (ideally, elevated on a wire rack or cooling rack). Before serving, sprinkle the cookies with powdered sugar.
