Ingredients:
2 cups coconut water
1 cup watercress
1 cup chopped pineapple
1 cup ice
1/2 cup fresh mint
1/2 cup red apple sliced
1/2 cup chopped cucumber
2 kiwis peeled and sliced
1/4 cup flax seed
1/4 cup Seasons Arbequina Extra Virgin Olive Oil
1/4 cup Seasons Honey Ginger Balsamic Vinegar
6 oz. tofu (about 1 inch slice)
1 tablespoon fresh ginger
Fresh mint for garnish
Directions:
Add all ingredients to a blender and mix until smooth. Pour into glasses and enjoy immediately. Serves 2-3.
