Golden Thai Mango & Cucumber Salad

Ingredients: 

2 cups mango, peeled and thinly julienned 

2 cups cucumber, thinly julienned 

2 garlic cloves, peeled and thinly sliced 

1 green chili pepper, seeded and thinly julienned 

1 cup cherry tomatoes, halved 

2 teaspoons fish sauce 

2 tablespoons Golden Thai White Balsamic Vinegar 

2 tablespoons Bianco White Balsamic Vinegar 

¼ cup Thai basil, chopped 

¼ cup roasted peanuts, chopped

Directions:

Place the mango, cucumber, garlic, and chili peppers in a large bowl. Using your hands, mash and smush the tomatoes into the bowl. Drizzle the fruit and veggies with fish sauce, Golden Thai Balsamic, and Bianco White Balsamic. Toss to coat and sprinkle with basil and peanuts before serving. We love this salad with grilled chicken seasoned with our Chimichurri Seasoning Blend! Serves 6
