Bacon & Bleu Tomatini

Ingredients:

1 cup vodka 

½ cup Bacon Infused Olive Oil 

1 cup cherry tomatoes 

Pinch Fleur de Sel and black pepper 

¼ cup Olives Stuffed with Bleu Cheese juice 

¼ cup dry vermouth 

Fresh basil leaves, cherry tomatoes, cooked bacon, and Bleu Cheese Stuffed Olives for garnish

Directions:

Blend vodka with our Bacon Infused Olive Oil until combined, then transfer to a sealed container and steep at room temperature for 24 hours. Chill in the freezer for 2 hours, remove the separated oil, and discard.

Broil tomatoes on a foil-lined sheet, drizzled with olive oil and seasoned with salt and pepper, for 5–6 minutes until soft. Cool, mash, and strain to reserve the juice.

Combine tomato juice, infused vodka, olive juice, and vermouth in a shaker with ice. Shake well and strain into martini glasses. Garnish with basil, roasted tomatoes, bacon, and blue cheese stuffed olives. Serves 4-6.
