Beet & Feta Velvet

Ingredients:

1 cup roasted beets, diced

8 oz. block feta cheese

1 package of cream cheese

1 garlic clove

1/2 cup Seasons Honey Ginger Vinegar

1/2 cup Seasons Extra Virgin Olive Oil (Koroneiki or Arbequina)

1-2 Tbsp Bella Cucina Aromatic Salt with Wildflowers

Directions:

Combine all ingredients (except salt) into a blender and puree until smooth. Spread on a plate with an additional drizzle of olive oil and garnish with wildflower salt. Serve with your favorite fresh veggies, crackers or bread. 

This also makes an excellent sauce for pasta. Simply add 1 cup of the prepared dip with a few tablespoons of pasta water to 2 cups of hot cooked pasta. Then toss to evenly coat, and enjoy!
