Sweet & Savory Popcorn Duo (Lords a-Leaping)

Ingredients:

Olive Oil Caramel Popcorn: 

¼ cup Sweet Butter Infused Olive Oil 

1 cup light brown sugar 

½ cup maple syrup 

1 teaspoon vanilla extract 

¾ teaspoon Fleur de Sel 

½ teaspoon baking soda 

8 cups popped plain popcorn 

Umami Cheddar Popcorn: 

8 cups popped plain popcorn 

3 tablespoons Porcini & Sage Infused Olive Oil 

3 ½ tablespoons natural cheddar cheese powder 

½ teaspoon Fleur de Sel 

Directions:

To make the caramel popcorn, preheat the oven to 250°F and line a large baking sheet with parchment paper (or a silicon baking mat). 

Place olive oil, brown sugar, maple syrup, vanilla, and salt in a large pot, and whisk to combine. Bring the mixture to a bubbly-simmer over medium to medium-high heat, whisking frequently. Once bubbling, cook the mixture for 7 minutes, whisking constantly. Place the popped popcorn in a large bowl and set aside. 

Remove from the heat and add the baking soda, whisk to combine (the mixture will increase in volume and bubble-up more, that is normal). Immediately pour the caramel mixture over the popcorn and, using a rubber spatula, gently stir to thoroughly coat. 

Transfer the coated popcorn to the prepared baking sheet and spread out in an even layer. Place the baking sheet in the oven and bake for 40 minutes (this will help harden the caramel to the popcorn). Remove from the oven and set aside to cool. 

To make the cheddar popcorn, place the popped popcorn in a large bowl. Drizzle the popcorn with the olive oil and toss to evenly coat. Sprinkle the popcorn with the cheese powder and salt and toss to coat (depending on the cheese powder purchased, you may want to add a little more for an even coating). 

Either combine the two popcorn flavors together for a fun sweet and savory holiday snack or serve separately. Serves 12
