Gigante Beans & Tomatoes with Pizza Oil Salmoriglio

Ingredients: 

Salmoriglio: 

¼ cup Pizza Infused Olive Oil 

¼ cup Sicilian Lemon White Balsamic 

2 garlic cloves, peeled and minced 

1 teaspoon lemon zest, minced 

1 tablespoon fresh parsley, chopped 

1 tablespoon fresh mint, chopped 

1 teaspoon fresh oregano, chopped 

½ teaspoon Tuscan Seasoning Blend 

Main:

2 cups cooked or jarred gigante beans, drained 

3 heirloom tomatoes, sliced 

¼ bulb fresh fennel, charred or roasted, and thinly sliced 

Fleur de Sel, to taste 

Directions:

Place the olive oil, balsamic, garlic, lemon zest, parsley, mint, oregano, and seasoning blend in a medium bowl, whisk to combine. 

Place the beans, tomatoes, and fennel on a serving platter and drizzle with the salmoriglio. Season to taste with salt before serving. Serves 4.
