Strawberry & Basil Sweet Chili Pork Skewers
These flavorful skewers are marinated and finished with a zesty, sweet, and spicy strawberry chili sauce made with our Strawberry Dark Balsamic Vinegar and Basil Infused Olive Oil. A perfect summer grilling recipe, bursting with fruity, herby flavor that pairs beautifully with pork.
Serves 4
Ingredients:
Strawberry Sweet Chili Sauce:
1 cup fresh or frozen strawberries
2 tablespoons granulated sugar
1 tablespoon mirin cooking wine
1 tablespoon Strawberry Infused Dark Balsamic Vinegar
1 tablespoon sambal oelek
1 garlic clove, peeled and minced
1 teaspoon fresh ginger, peeled and minced
2 tablespoons Basil Infused Olive Oil
2 tablespoons soy sauce
1 pound pork loin, cut into large bite-sized pieces
1 bunch scallions, cut into 1-inch pieces
Serve with cooked rice, lettuce leaves, cucumbers, red onion, basil, cilantro, cabbage, and lime wedges.
Instructions
Place strawberries, sugar, cooking wine, balsamic, sambal oelek, garlic, and ginger in a medium saucepan and whisk to combine. Bring the mixture to a low simmer over medium heat, whisking occasionally. Cook for 10 minutes, then transfer to a food processor or blender and blend until smooth.
Divide the strawberry chili sauce in half and place one of those halves in the refrigerator for later use. Add the olive oil and soy sauce to the other half and whisk to combine the marinade. Add the pork loin pieces to the marinade, toss to coat, and refrigerate for 1 hour.
Once marinated, thread the pork and scallions onto skewers.
Preheat a gas grill to medium heat or prep coals for a charcoal grill.
Once hot, place the skewers onto the grill and cook for 10 minutes, flipping halfway through, or until the skewers are cooked. Remove from the grill and set aside to rest for 5 minutes. Brush the grilled skewers with some of the reserved strawberry sweet chili sauce and serve with any remaining sweet chili sauce on the side for dipping and dunking.
