Strawberry, Watermelon & Cucumber Salad


Strawberry & Herbs de Provence Vinaigrette: 

3 tablespoons Strawberry Balsamic 

1 tablespoon honey 

1 tablespoon orange juice 

1 tablespoon Dijon mustard 

1/4 cup Herbs de Provence Olive Oil 

Fleur de Sel and black pepper, to taste 


2 cups fresh strawberries, halved 

2 cups cucumbers, sliced 

3 cups watermelon, cubed 

1/2 cup feta cheese crumbles 

2 tablespoons fresh mint, chopped 

2 tablespoons fresh basil, chopped 

2 tablespoons pistachios, chopped 



Place balsamic, honey, orange juice, mustard, and olive oil in a medium bowl and whisk to combine. Season to taste with salt and pepper and refrigerate in a sealable container until ready to serve. 

Divide strawberries, cucumbers, and watermelon between plates or bowls. Sprinkle the salad with feta cheese, mint, basil, and pistachios before drizzling with vinaigrette. Serve chilled and enjoy!
