This is my flavor. So good on chicken, pasta, basically on anything!
Peas alla Florentina
This easy Easter side dish is infused with Italian flavors. We used our Pesto Infused Olive Oil to harmoniously balance the sweet English peas, bacon, and garlic flavors. A light sprinkle of Fleur de Sel is all that is needed to season this delicious side dish, which is the perfect companion to lamb.
Serves 4
Ingredients:
2 thick slices bacon, cut into 1-inch strips
2 tablespoons Pesto Infused Olive Oil
4 garlic cloves, peeled and minced
12 ounces fresh English peas
Fleur de Sel, to taste
2 tablespoons fresh parsley, chopped
Instructions
Heat a large skillet over medium heat. Once hot, add the bacon and cook until just rendered and lightly crisp, about 4-5 minutes. Using a slotted spoon, remove the bacon, and set aside on a clean plate.
Add the olive oil to the skillet, and once hot, add the garlic and peas. Sauté for 10 minutes, return the bacon to the skillet, and cook for 2-3 minutes more or until the peas are tender. Season to taste with salt and garnish with chopped parsley before serving.
